Chocolate Lover’s Cheesecake

I was put in charge of pie/dessert for Christmas dinner, so I found it funny that I found this recipe in my email today. I have a whole lot of chocolate in just about every form left over from our baking last weekend, so I think this recipe will be perfect.

Chocolate Lover’s Cheesecake

Crust
6 ounces graham cracker crumbs, crushed fine with rolling pin
1/3 cup granulated sugar
1/4 cup melted butter

Filling
2-1/4 lbs. cream cheese, softened
1 cup sugar
4 eggs
3/4 cup mayonnaise
1-1/2 tsp vanilla extract
12 ounces chocolate chips

Prepare crust: Combine crumbs, sugar and butter, and fold until thoroughly mixed. Lightly grease interior of a 9-inch springform pan or 10-inch heart-shaped pan. Cover entire inside of pan with crumb mixture. Bake at 350 degrees (F) for 4 minutes.

Make filling: Beat cream cheese with electric mixer and gradually fold in sugar. Add eggs, one at a time, and continue mixing. Add mayonnaise and vanilla, and mix. In double boiler or microwave, melt chocolate chips, stirring frequently. Fold melted chocolate into cream-cheese batter, occasionally scraping down sides of bowl.

Pour batter into baked crust and bake in a preheated 350-degree oven for 55 to 60 minutes. Let cool, then refrigerate overnight.
