Some might think I’m a tad strange. While I dislike Christmas, that doesn’t stop me from stashing a few gifts here and there starting clear back in October. I’m sure there are others out there that do the same, which is why I’ve started adding books, toys, and clothes to our growing list of eBay auctions. We’re cleaning out rooms and closets, finding new homes for all the stuff the kids have outgrown. As mentioned before, we’ll be moving within the next month or two, so all stuff we don’t use anymore must go! Little by little I’ll be adding more, and for dirt cheap as well. My man loves apple crisp, and he loves apple pie. So we came up with a way to combine the two in a delicious desert. Really you could call it apple pie or apple crisp either one, and no one would really know the difference. Just don’t tell the man in my house eating it hehe. This recipe is easily doubled for larger pie shells or more than one. We used 2 SMALL pie shells – 6oz according to the label. The recipe would be for ONE. If you use two, be sure to double it. Apple Crisp Pie 1 Small Pie Crust (graham cracker, 6oz) Filling: 3-4 apples (or more if you like a little extra filling – ours were a little skimpy) 1/2 cup sugar 1 teaspoon cinnamon Topping: 1/4 cup butter, melted 1/4 cup brown sugar 1/2 cup flour 1/2 cup oatmeal Peel and cut apples into small cubes and mix with sugar and cinnamon. The pumpkins come out of the gardens, costumes are on sale, and we’re giggling down the seasonal aisles of all the stores……. IT’S ALMOST HALLOWEEN! I’m worse than the kids this time of year, I really am. I get so flipping excited I can barely sit still, and it’s not just on the day of Halloween…it’s the whole dang month. Before then, even, with everything coming out WAY early with every holiday. With this particular seasonal festivity, though, I don’t mind. To me there’s just a certain electricity it creates, and it excites me. Imagine my giddiness when I spotted “Oktoberfest” going on in a near by town. It was in the back of my head for the past week already as something we may be doing on the 2nd, but what really sealed the deal is when I see the words “FREE”....
